Braised Salted Cod with Potatoes

This traditional dish has deep roots in Italian home cooking, especially in the central and southern regions where salted cod—thanks to its long shelf life—was once a precious and reliable ingredient. Born from simple, humble kitchen traditions, this recipe transforms a few basic ingredients into a rich, comforting stew: the tomatoes add depth, the wine enhances the aroma, and the potatoes absorb the savory flavor of the cod, creating a beautifully balanced dish.
Originally prepared during meatless days, especially around Christmas, it has since become a family classic enjoyed year-round. Each region has its own variation: some add olives or capers, others cook it slowly in a clay pot, and some enrich it with bay leaves or fresh parsley. What all versions share is their warmth and convivial character—a true expression of Mediterranean comfort food.

⏲️ Time: 45 minutes (plus 3 days to desalinate the cod)
🧺 Ingredients:
600 g salted cod (soaked)
600 g potatoes
1 medium onion
1–2 garlic cloves
400 g diced tomatoes or peeled tomatoes
100 ml water
90 ml red wine
2 tbsp extra virgin olive oil
1 tbsp tomato paste (optional)
Chopped parsley (optional, for serving)
🥣 Instructions:
Desalt the Cod
Brush off excess salt from the cod, cut it into pieces, and rinse well under running water. Place it in a large bowl and cover completely with cold water. Let it soak for 3 days, changing the water 2–3 times a day. On the third day, give it a final rinse and pat dry thoroughly.
Prepare the soffritto
Heat the olive oil in a wide pan, then add the finely chopped garlic and onion. Sauté gently until the onion softens and the garlic becomes fragrant.
Deglaze with Wine
Pour in half of the red wine and let the alcohol evaporate. When the liquid reduces, continue with the recipe.
Make the Sauce
Add the tomatoes and, if you like, the tomato paste. Pour in the remaining wine, mix well, and let the sauce simmer for 5–7 minutes to develop its flavor.
Add the Potatoes
Add the peeled potato wedges, pour in the water, cover, and let everything cook for 20–25 minutes, or until the potatoes begin to soften.
Cook the Cod
Gently add the cod pieces on top, cover again, and let them cook for about 10 minutes, being careful not to break them apart.
Serve
Serve hot and finish with freshly chopped parsley if desired.
💡Tips:
Change the soaking water at least twice a day (preferably three) to properly desalinate the cod.
Do not add salt while cooking—taste only at the end and adjust if needed.
Let the tomato sauce simmer well before adding the potatoes for the best flavor.
Stir gently once the cod is added, as it tends to break easily.
